Water is one of the most precious resources in winemaking and distilling, and at Brixeur, we ensure that none goes to waste. Our inverted roof system captures rainwater, which is then treated and repurposed for essential tasks like cleaning, significantly reducing our dependence on well water.
In the vineyard, our vines are dry-farmed, meaning they rely entirely on natural rainfall. Unlike irrigated vineyards, our approach not only conserves water but also encourages deeper root growth, enhancing the complexity of our wines and spirits.
At the distillery, our closed-loop water-chilling system prevents thousands of gallons of water from being lost each year, cycling only 22 gallons per month to cool our stills. And with distillation runs that can last over 50 hours, we ensure maximum efficiency by keeping our stills running continuously—avoiding the wasteful energy spikes that come with restarting.
By being intentional with our water and energy use, we create a sustainable system that respects the environment while maintaining the highest level of craftsmanship.
